How to Make Blueberry Muffins
Making Blueberry Muffins from Scratch
Bake sweets and carry a big whisk, that's what I did yesterday because I was bored. When most people have nothing to do they turn to the TV, and eat snacks. Instead of turning on the TV and eating snacks, I turned off the TV and made the snacks.
Light and fluffy, with a crumbly topping, blueberry muffins are perfect for an early breakfast, a midday snack, or even something to munch on during a long road trip. Blueberry muffins require the perfect timing, and if you do it right, they take no longer than 25 to 30 minutes to make, plus twenty minutes in the oven. Along with simple ingredients, it is one of the best snacks I know of.
First things first, put liners in the muffin tray and heat your oven to temperature. Then you have to create the topping in a bowl, so that the muffin batter isn't waiting on you to be put in the oven. After you make the topping make the actual muffin batter, once it is made take a soup spoon and put a generous scoop into each muffin tin. The batter shouldn't reach the top of the liner, it should be about ¾th of the way full. You leave a gap, because after all the batter is used up, you put the topping on.

Now you’re ready to bake the muffins, just put them in the preheated oven for 20 minutes. To check them, insert a toothpick into the middle of a muffin and pull it out, if it comes out clean they are done, but if its coated in batter, it’s not done. If your toothpick does come out with something on it be sure to see if its batter, or if you stuck it into a blueberry.

Recipe:
2 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup fresh or frozen blueberries
2 eggs lightly beaten
½ cup milk
½ cup melted butter
2 teaspoons vanilla extract
TOPPING
3 tablespoons softend butter
½ cup all purpose flour
3 ½ tablespoons sugar
Preheat oven to 400 degrees F
Mix flour, sugar, baking soda, and salt in a bowl. Add milk, eggs, butter, and vanilla and whisk until combined.gently fold in blueberries. Spoon batter into muffin tin, filling each cup 2/ full.
Make the topping. Mix butter, flour, and sugar until mixture is crumbly. Sprinkle on top of muffins bake for 15-20 min or until toothpick comes out clean. Serve warm or room temperature.
